LorAnn professional bakery emulsions are distinguished from concentrated extracts by a rich, robust and long-lasting taste. The emulsions are particularly suitable for use in more extreme environments. They can be processed at high temperatures. An excellent choice for all cakes, biscuits, tops, but also for fillings such as icing and desserts.
Emulsions are water-based, alcohol-free alternatives to extracts. Instead of using alcohol, the flavor is micro-encapsulated in natural stabilizers and suspended in water. The encapsulation allows the flavor to not lose its integrity when exposed to high heat.
For baking use 1 teaspoon emulsion = 1 teaspoon extract
For products that do not require baking such as glazes or interiors, use less than for products with thermal processing.
